The easiest method to cook shishito is by heating a tablespoon of olive oil in a frying pan. The sugar works with the pectin and fruit acids to form the gel, and it also acts as a preservative. Once hot, cook shishitos for 5-7 minutes (or until blistered and charred) then remove from skillet. They dont reach even mild jalapeo heat, but its enough to catch you by surprise.
